I'm Fabiola Merlos, carrying on the legacy of my mother, Lucila Molina de Merlos, at Casa Merlos. My mother dedicated her life to preserving 18th-century Poblana cuisine, always saying her food brought happiness. She started working at six, eventually taking cooking classes and dreaming of her own restaurant.
